An "honorary" white wine in the WineBork tasting inventory. Elegant, flavorful, complex white wine that -- from firsthand experience --pairs sensationally with salmon. Nose of smoke, minerals, stones (granite directly from the face of El Capitan, claimed one taster), coconut, pears, sweet green apple, and chalk. Some tropical mango/kiwi notes also. Crisp and refreshing, with 0.5% of residual sugar but with no sweet or cloying edges. Has a Loire-Valley feel to it, like a cross between a good Sancerre and a good, dry Vouvray. Great stuff: seek it out! According to the winemaker, Bill Kelley, also available on some good restaurant wine lists. (Note: this wine was tasted again in May 2003, and, while approaching old age, was still fruit-driven and flavorful. The crisper feel of its youth had evolved into a still-attractive, soft, peach-flavored wine that had something of the nature of a drier Alsatian Pinot Blanc.) - WB Team 2000-07-25
